  4. 4

Return the pineapple to the pan with the prawns and toss for 20 seconds.

  5. 5

Warm the corn tortillas (see the base recipe) in a dry pan and keep them wrapped in a cloth.

  6. 6

Fill each tortilla with prawns and pineapple, top with onion and coriander, then add a spoonful of your ready made salsa taquera (see the base recipe). Serve with lime wedges.

Tips

  • Cook the pineapple first in a very hot dry pan. A good char adds a smoky sweetness that balances the chilli.
  • Use fresh pineapple. Tinned is too soft and sweet.
  • The salsa taquera is hot. Serve it in a small bowl so people can add as much as they want.

Storing and freezing

Best eaten fresh. Cool leftover filling within 1 hour and keep in the fridge for up to 1 day. Reheat until steaming hot all the way through.

Questions

Why add pineapple to prawn tacos?

It is borrowed from tacos al pastor, where pineapple balances the chilli and adds a juicy sweetness. Charring it deepens the flavour.

Can I use fish instead of prawns?

Yes. Use 500 g firm white fish in chunks and cook for 3 minutes per side.

Is this recipe dairy free?

Yes. It contains no dairy, egg, gluten or nuts, provided your tortillas are pure corn.
