Method

  1. 1

Pour the cold water into a freezer-safe container and freeze solid, at least 8 hours or overnight. Chill 4 serving bowls in the freezer.

    480 min
  2. 2

For the syrup, put the chopped strawberries, sugar, lemon juice and 100 ml water in a pan. Simmer gently for 10 minutes until the fruit collapses and the syrup is deep red.

    10 min
  3. 3

Push the syrup through a sieve, pressing out all the juice. Cool, then chill until cold. It should be pourable but a little thick.

  4. 4

Leave the ice block on the worktop for 5 minutes so it is slightly damp. Break it into chunks and blitz in a strong food processor or blender in short bursts, scraping down, until it looks like fine, fluffy snow.

  5. 5

Work quickly: pile the ice high into the chilled bowls, spooning it loosely so it stays airy.

  6. 6

Pour the strawberry syrup over each pile, drizzle with the condensed milk and top with the halved strawberries. Eat immediately with a spoon.
