Method

  1. 1

Put the strawberries, water and erythritol in a pan. Bring to a gentle simmer and cook for 10 minutes, until the fruit is pale and the liquid is deep pink.

  2. 2

Tip into a sieve set over a bowl. Leave to drip for 20 minutes without pressing, so the jelly stays clear. You need about 400 ml of liquid.

    20 min
  3. 3

Soak the gelatine leaves in a bowl of cold water for 5 minutes, until soft and floppy.

    5 min
  4. 4

Warm the strained liquid until steaming but not boiling. Squeeze the water out of the gelatine and stir the leaves into the hot liquid until they have melted completely.

  5. 5

Stir in the lemon juice and vanilla. Pour into 4 glasses or small moulds.

  6. 6

Chill for at least 4 hours until set. It should wobble when you shake the glass. Serve plain or with a spoonful of yoghurt.
