Stir in the spring onions and serve over the rice.

Tips

  • Add the cabbage in handfuls so it fries instead of steaming.
  • Let the cabbage catch a little colour for sweetness.
  • Swap the pork for turkey or chicken mince if you prefer.

Storing and freezing

Keeps 2 days in the fridge in a covered tub. Cool within 1 hour and reheat until steaming hot all the way through. Freezes for 1 month.

Questions

Can I use another cabbage?

Yes. Spring greens, hispi or Chinese leaf all work. Softer cabbages cook faster, so reduce the time slightly.

Can I make it vegetarian?

Yes. Use crumbled firm tofu or mushrooms instead of pork mince and the vegan stir fry sauce.
