Method
- 1
Rinse the rice until the water runs almost clear. Cook in a covered pan with 400 ml water for 12 minutes on the lowest heat, then rest covered for 10 minutes.
12 min - 2
Put the chicken mince, tamari, mirin, sugar, ginger and water in a cold pan. Cook over a medium heat, stirring with 2 spoons to break up the mince, for 8 to 10 minutes until dry, crumbly and glossy.
9 min - 3
Beat the eggs with the sugar and salt. Cook in a clean non stick pan over a low heat, stirring constantly with chopsticks or a fork, for 3 minutes until in small, soft curds.
3 min - 4
Wilt the spinach in a pan with a splash of water for 1 minute. Squeeze dry, chop roughly and toss with the spoon of tamari and the sesame oil.
- 5
Divide the rice between 4 bowls. Arrange the chicken, egg and spinach in 3 neat sections on top. Sprinkle over the sesame seeds.
