Method

  1. 1

Grease a 1 litre pudding basin well with butter. Pour the golden syrup into the bottom.

  2. 2

Beat the butter and sugar together for 3 minutes until pale and fluffy.

  3. 3

Beat in the eggs one at a time, adding a spoonful of flour with each to stop it curdling.

  4. 4

Fold in the rest of the flour, then the milk and vanilla until you have a soft dropping batter. Spoon it over the syrup.

  5. 5

Cover the basin with a sheet of baking paper and foil, pleated in the middle, and tie it with string.

  6. 6

Sit the basin on an upturned saucer in the slow cooker and pour in boiling water to come halfway up the basin. Cover and cook on high for 3 hours.

Carefully lift out the basin, run a knife around the edge and turn out onto a plate. Serve with custard.
