Method

Put the tomatoes, cucumber, pepper and onion in a wide bowl.

Whisk the oil, vinegar and salt together and toss through the vegetables. Leave for 5 minutes so the juices run.

Pile the salad onto plates or a platter. Cover thickly with the grated feta and finish with parsley. Serve straight away.
