Method

  1. 1

Put the wings in a large pot, cover with cold water, bring to the boil and boil for 5 minutes. Drain, rinse the wings and scum off, and wash the pot.

  2. 2

Return the wings to the pot with the onion, ginger, garlic, spring onion tops and the 2000 ml water. Bring to a bare simmer. Never let it boil hard or the broth turns cloudy.

  3. 3

Simmer gently for 2 hours, skimming now and then. Add the kombu for the last 10 minutes only, then lift it out.

  4. 4

Strain the broth through a sieve. You should have about 1.4 litres. Skim off most of the fat and keep a spoonful.

  5. 5

For the tare, warm the salt, mirin and sake in a small pan for 1 minute until the salt dissolves. Stir in the sesame oil.

  6. 6

Boil the eggs for 6 minutes 30 seconds, cool in iced water and peel. Blanch the pak choi for 1 minute. Cook the noodles as the pack says.

  7. 7

Put 1 tbsp of tare in each bowl. Ladle in 350 ml of hot broth and stir. Add the drained noodles, egg halves, pak choi, spring onion and nori.
