Method
- 1
Mix the vital wheat gluten, nutritional yeast, paprika, garlic granules and thyme in a large bowl.
- 2
Whisk the cold stock with the tomato purée, soy sauce and 1 tbsp oil. Pour into the bowl and mix to a shaggy dough. Knead for 2 minutes until it feels stretchy, then rest it for 10 minutes.
10 min - 3
Cut the dough into 4 and press each piece into a flat steak about 1.5 cm thick. Wrap each loosely in foil, leaving room to puff up. Heat the oven to 180°C (160°C fan) and bake for 45 minutes.
45 min - 4
While they bake, soften the shallot in 1 tbsp oil for 4 minutes. Add the crushed peppercorns for 1 minute, then pour in the hot stock and simmer for 8 minutes.
8 min - 5
Mix the cornflour with 2 tbsp cold water, stir it in with the oat cream and simmer for 2 minutes until glossy and lightly thickened.
2 min - 6
Unwrap the steaks and pat dry. Fry in 2 tbsp oil over a medium high heat for 3 minutes each side until browned and crisp at the edges.
6 min - 7
Boil the green beans for 4 minutes, drain, and serve with the steaks and plenty of peppercorn sauce.
