Method

  1. 1

Make sure your gochujang marinade is ready (see the base recipe). Soak 8 wooden skewers in cold water for 20 minutes, so they do not burn. Spoon 4 tbsp of marinade into a clean bowl for basting.

  2. 2

Toss the prawns with the rest of the marinade in a bowl. Leave for 15 minutes in the fridge, no longer, as prawns turn mushy if left.

  3. 3

Cook the rice in a lidded pan with 450 ml of water for 12 minutes, then rest with the lid on for 10 minutes.

Thread the prawns, courgette and pepper onto the skewers. Brush the vegetables with the oil.

  5. 5

Heat a griddle pan or grill to high. Cook the skewers for 2 to 3 minutes on each side, until the prawns are pink and opaque all the way through.

  6. 6

Brush with the clean basting marinade for the last minute. Serve on rice, scattered with spring onions and sesame seeds, with lime wedges.

Tips

  • Do not marinate prawns for more than 30 minutes. The acid and salt change the texture.
  • Cook the prawns until pink and curled. A C shape means cooked, tight O shape means overdone.
  • Keep a separate clean pot of glaze for basting, so cooked food never touches the raw prawn marinade.

Storing and freezing

Best eaten fresh. Cool leftovers within 1 hour and keep in the fridge for up to 1 day. Eat cold in a salad rather than reheating prawns.

Questions

Can I use frozen prawns?

Yes. Thaw them fully in the fridge overnight, then pat dry before marinating.

Can I cook these in the oven?

Yes. Roast the skewers on a lined tray at 220C for 8 to 10 minutes, turning once, then brush with the clean glaze.

What can I use instead of prawns?

Cubed salmon or chunks of firm tofu work well. Salmon needs 6 to 8 minutes, tofu 8 to 10 minutes.
