Method
- 1
Heat the oven to 220°C (200°C fan). Put the peppers cut side down on a large tray with the tomatoes and whole garlic cloves. Roast for 35 minutes until the pepper skins are blistered and blackened in places.
35 min - 2
Scatter the almonds and hazelnuts on a second small tray and toast for the last 8 minutes, until golden and smelling nutty. Watch them closely as they burn quickly.
8 min - 3
Tip the hot peppers into a bowl and cover with a plate. Leave for 10 minutes, then peel off the loose skins. Squeeze the soft garlic out of its skins.
10 min - 4
Put the peppers, tomatoes, garlic and nuts in a food processor with the paprika, vinegar, salt and cayenne. Blend to a thick, slightly rough purée.
- 5
With the motor running, pour in the olive oil in a steady stream. Taste and add more salt or vinegar if you like.
- 6
Serve at room temperature. It keeps in a jar in the fridge for 5 days, with a thin layer of oil on top.
