Method

  1. 1

Trim off any thick fat from the lamb. Stab the leg all over with a small sharp knife, about 40 deep cuts, to let the marinade in.

  2. 2

Mix the yoghurt with the ginger and garlic paste, lemon juice, chilli, cumin, coriander, garam masala, turmeric, pepper and salt. Rub it all over the lamb and into the cuts. Cover and chill for at least 12 hours, up to 24.

  3. 3

Heat the oven to 160°C (140°C fan). Take the lamb out of the fridge 1 hour ahead. Put it in a deep roasting tin with the water, brush with half the ghee and cover tightly with foil.

  4. 4

Roast for 3 hours, basting once with the juices halfway. The meat should be starting to pull away from the bone.

  5. 5

Take off the foil, brush with the remaining ghee and turn the oven up to 220°C (200°C fan). Roast for 20 more minutes until the surface is dark and sticky.

Rest the lamb under loose foil for 20 minutes. Pull or carve the meat and serve with the pan juices, naan and lemon wedges.
