Method

  1. 1

Heat 1 tbsp oil in a large frying pan over a high heat. Add the mushrooms in one layer, in batches if needed, and cook for 6 to 7 minutes without stirring too much, until golden and their liquid has gone.

  2. 2

Add the onion and garlic and cook for 3 minutes. Stir in 4 tbsp of your ready made salsa roja (see the base recipe), season with salt, and take off the heat.

  3. 3

Warm the tortillas in a dry pan for 15 seconds a side so they fold without cracking.

  4. 4

Cover half of each tortilla with cheese, then a spoonful of the mushroom mixture and a pinch of coriander. Fold over to make a half moon.

  5. 5

Wipe out the pan, add a little oil and cook the quesadillas two at a time over a medium heat for 2 to 3 minutes a side, until the tortilla is golden and the cheese has melted.

    5 min
  6. 6

Cut into wedges and serve with the remaining warm salsa and lime wedges.

Tips

  • Cook the mushrooms until their water has fully evaporated. Wet mushrooms make soggy quesadillas.
  • Do not overfill. A thin layer of filling cooks through and keeps the tortilla crisp.
  • Oaxaca cheese is traditional, but a mix of mozzarella and a little cheddar gives a good pull.

Storing and freezing

Eat fresh. Cooked mushroom filling keeps 3 days in the fridge. Reheat the filling until steaming hot before using.

Questions

Can I use other mushrooms?

Yes. Oyster, portobello or a mix of wild mushrooms all work. Mexican quesadillas often use huitlacoche or flor de calabaza too.

How do I stop the tortilla splitting?

Warm it for 15 seconds on each side first and keep it wrapped in a tea towel. Cold corn tortillas crack when folded.

Can I make these dairy free?

Yes. Use a good melting dairy free cheese and a little extra salsa. The mushrooms carry plenty of flavour on their own.
