Method

  1. 1

Char the poblanos directly over a gas flame or under a very hot grill for 8 to 10 minutes, turning, until blackened all over. Put in a bowl, cover and leave to steam for 10 minutes.

  2. 2

Peel off the skins, remove the seeds and slice the flesh into thin strips (rajas).

  3. 3

Heat the oil in a frying pan and soften the onion for 5 minutes. Add the rajas and cook for 2 minutes. Season.

  4. 4

Crisp the carnitas (see the base recipe) in a hot dry pan for 3 minutes until steaming hot all the way through.

    3 min
  5. 5

Warm your corn tortillas (see the base recipe) one at a time in a dry pan for 30 seconds. Fill half of each with cheese, carnitas and rajas, fold over and press.

  6. 6

Cook the quesadillas for 2 to 3 minutes a side until the cheese melts and the tortilla is flecked with gold. Serve with lime wedges.

Tips

  • Poblanos are mild. Add a sliced jalapeno to the onions if you want heat.
  • Fresh corn tortillas fold without cracking when warm. Old ones tear, so warm them first.
  • Do not overfill, or the cheese leaks and burns on the pan.

Storing and freezing

Best eaten fresh. The filling keeps in the fridge for up to 3 days, and the quesadillas can be reheated in a dry pan until hot through.

Questions

What are rajas?

Rajas means strips. In Mexican cooking it usually means roasted poblano pepper cut into strips and cooked with onion, often with cream.

Can I use another cheese?

Yes. Oaxaca cheese melts like mozzarella. Mild cheddar or Monterey Jack also work.

Can I make it dairy free?

Yes, omit the cheese and add mashed avocado inside after cooking.
