Method

  1. 1

Heat the oven to 200°C (180°C fan). Roll out your ready made shortcrust pastry (see the base recipe) and line a 25 cm loose bottomed tart tin. Chill for 20 minutes.

  2. 2

Blind bake with baking paper and beans for 15 minutes, remove them and bake for 5 minutes more until pale golden. Lower the oven to 180°C (160°C fan).

  3. 3

Warm the olive oil in a pan and add the prawns for 1 minute, until they just turn pink. Add the ouzo, if using, and let it bubble for 20 seconds. Remove the prawns with a slotted spoon.

  4. 4

Add your ready made tomato sauce (see the base recipe) and the oregano to the pan and simmer for 5 minutes until thick. Cool slightly, then beat in the eggs.

  5. 5

Arrange the prawns and half the feta in the pastry case, pour over the tomato mixture and top with the remaining feta.

  6. 6

Bake for 25 to 30 minutes until the filling is set and the feta is lightly golden. Scatter with parsley and rest for 10 minutes before cutting.

Tips

  • Only just cook the prawns before baking so they stay juicy in the oven.
  • Let the tomato sauce cool a little before adding the eggs, or they can scramble.
  • Leave out the ouzo and use a splash of white wine or lemon juice if you prefer.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 2 days. Reheat slices at 160C (fan 140C) for 15 minutes until hot through. Not suitable for freezing.

Questions

Do I need ouzo?

No. It adds a gentle aniseed note which is traditional in saganaki, but you can leave it out or use white wine.

Can I use a different cheese?

Yes. Halloumi cubes or mature cheddar work, though feta gives the salty tang that suits the tomato.

Can I make it vegetarian?

Yes. Replace the prawns with roasted aubergine cubes or cooked butter beans. The tart will be just as good.
