Tips
- Vermicelli only needs soaking, not boiling. Over soaking makes it mushy.
- Make sure prawns are cooked until pink all the way through.
- Drizzle more chilli oil at the table for extra heat.
Storing and freezing
Eat the same day. Chill leftovers within 1 hour and use within 1 day. Reheat until steaming hot all the way through.
Questions
Can I use frozen prawns?
Yes. Defrost them fully in the fridge and pat dry before frying so they brown.
How do I make it less spicy?
Use less chilli oil, or add it at the table. The stir fry sauce itself has only a gentle heat.
Is it gluten free?
Yes, with rice noodles and gluten free tamari in the stir fry sauce. Check the chilli oil label if shop bought.
