Method
- 1
Warm your ready made arroz verde cilantro lime (see the base recipe) in a covered pan or the microwave until steaming hot all the way through. Keep warm.
- 2
Pour your ready made pozole verde base (see the base recipe) into a wide frying pan and bring to a gentle simmer.
- 3
Season the fish with salt and lay the fillets in the sauce. Cover and poach very gently for 6 to 8 minutes, until the fish flakes.
7 min - 4
Lift the fish out carefully. If the sauce is thin, simmer it for 3 minutes to thicken.
3 min - 5
Spoon the sauce over the fish. Serve with the rice, avocado, coriander and lime wedges.
Tips
- Poach, do not boil. Fish cooked in barely trembling sauce stays moist.
- Use thick fillets or loins so they hold together.
- Squeeze lime over the finished dish to brighten it.
Storing and freezing
Best eaten fresh. Keep leftovers in the fridge for 1 day and reheat gently until steaming hot all the way through.
