Method

  1. 1

Rinse the rice, then cook it in the water with the salt: boil, cover and cook on the lowest heat for 12 minutes, rest 5 minutes and fluff.

  2. 2

Fry the peppers in the oil over a medium high heat for 8 minutes until soft and a little charred.

    8 min
  3. 3

Warm your ready made easy red mole (see the base recipe) with 100 ml water in a pan, stir in the beans and simmer for 8 minutes until thick.

    8 min
  4. 4

Stir the lime juice and coriander through the rice. Warm your ready made flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  5. 5

Fill each tortilla with rice, mole beans and peppers, fold in the ends and roll up tightly. Fry seam down in a dry pan for 1 minute to seal, then serve.

Tips

  • Warm tortillas until they are soft and bendy. Cold ones split as you roll.
  • Let the mole beans cool a little before filling so the steam does not soften the tortilla.
  • Do not overfill. Two to three tablespoons of each is plenty for a small tortilla.

Storing and freezing

Keeps 3 days in the fridge, wrapped. Reheat in a hot oven or pan until steaming hot all through. Freeze wrapped for up to 2 months.

Questions

Can I make these gluten free?

Use gluten free tortillas or serve the filling as a rice bowl. The mole itself is gluten free.

Can I add cheese?

Yes, grated cheddar or Monterey Jack melts nicely with the beans. That makes it vegetarian rather than vegan.

Can I use pinto beans?

Yes, pinto beans are also traditional and a bit creamier. Drain and rinse them well first.
