Method
- 1
Pat the prawns dry with kitchen paper and season lightly with salt.
- 2
Warm your ready made pot beans with their broth (see the base recipe) in a pan, and reheat the cilantro lime rice (see the base recipe) in a covered pan with a splash of water, both until steaming hot all the way through. Keep warm.
- 3
Heat the oil in a large frying pan over a high heat. Add the garlic and cook for 30 seconds until fragrant.
- 4
Add the prawns and cook for 1 to 2 minutes, turning once, until just turning pink.
2 min - 5
Pour in your ready made salsa a la diabla (see the base recipe). Simmer for 2 to 3 minutes, until the prawns are pink all through, firm and curled and the sauce is bubbling.
3 min - 6
Spoon the rice and beans onto plates, top with the prawns and sauce, and scatter with coriander. Serve with lime wedges.
Tips
- Cook the prawns only until they curl and turn pink. Overcooking makes them tough and rubbery.
- The sauce is hot. Serve with plenty of rice, beans and lime, or thin the sauce with a splash of water.
- If using frozen prawns, defrost fully in the fridge and dry well before cooking.
Storing and freezing
Eat straight away. Cool leftovers within 1 hour and keep in the fridge for 1 day. Reheat until steaming hot all the way through. Reheat the rice only once.
Questions
What does a la diabla mean?
It means devilled, a sauce of dried chillies, usually guajillo and arbol, tomato and garlic. It is rich, smoky and very hot, so the cooling rice and beans are a welcome contrast.
Can I make it less hot?
Yes. Thin the sauce with a little water or stock, or serve the prawns with plenty of lime crema. Use a mix of devilled sauce and mild salsa roja.
Can I use cooked prawns?
Yes, but add them for the last 1 minute only, to warm through. Cooking cooked prawns for longer will make them rubbery.
