Method
- 1
Heat the oven to 200°C (180°C fan). Heat the oil in an ovenproof frying pan or shallow baking dish on the hob and cook the onion and poblano strips for 8 minutes until soft. Add the garlic and oregano for 1 minute.
9 min - 2
Season the cod fillets with salt and the juice of half the lime and nestle them into the vegetables.
- 3
Bake for 12 minutes until the fish is opaque and flakes easily.
12 min - 4
Warm your ready made queso (see the base recipe) gently in a small pan over a low heat, stirring, until steaming. Add a splash of milk if it has thickened. Do not let it boil.
- 5
Spoon the queso over the fish and return to the oven for 3 minutes to heat through.
3 min - 6
Serve with lime wedges, rice or warm corn tortillas.
Tips
- Choose thick fillets so they stay moist in the oven.
- Fish is ready when it turns opaque and flakes with a fork.
- Haddock, pollock or hake work as well as cod.
Storing and freezing
Best eaten at once. Keep leftovers in the fridge for up to 1 day and reheat until steaming hot all the way through.
