Method

  1. 1

Heat the oven to 200°C (180°C fan). Prick the potatoes with a fork, rub with half the oil and a little salt, and bake directly on the oven shelf for 1 hour to 1 hour 15 minutes, until the skin is crisp and the middle is soft.

    70 min
  2. 2

Meanwhile, heat the remaining oil in a frying pan over a high heat. Cook the dry sweetcorn for 6 to 8 minutes until charred in places, then take off the heat.

    7 min
  3. 3

Mix the charred corn with half the spring onions, the coriander and 50 ml of the elote sauce (see the base recipe) in a bowl.

  4. 4

Split the hot potatoes open and fluff the insides with a fork.

  5. 5

Spoon the corn mixture into each potato, drizzle over the rest of the sauce, then finish with the remaining spring onions, a dusting of chilli powder and a lime wedge.

Tips

  • Bake the potatoes straight on the oven shelf for the crispest skins.
  • For a quicker version, microwave the potatoes for 8 minutes then crisp them in the oven for 15 minutes.
  • Add a handful of grated cheddar to the potato before the topping if you want it extra cheesy.
  • Check the potato is soft right through before you pull it out, a knife should slide in with no resistance.

Storing and freezing

Eat fresh. Cool leftover potatoes within 1 hour, keep in the fridge for up to 2 days and reheat until steaming hot all the way through. Reheat the topping only once.

Questions

Can I use sweet potatoes?

Yes. Bake them for 45 to 55 minutes at the same temperature. They suit the smoky chilli and lime very well.

Can I make the topping ahead?

Yes. Char the corn and mix it with the spring onions and coriander up to a day ahead. Add the sauce just before serving.

Is this a full meal?

As a vegetarian dinner it is filling for most people, and works well with a green salad or a side of black beans.
