  6. 6

Stir in the garam masala and serve with rice or chapatis.

Tips

  • Brown the mushrooms in batches for the best flavour. Crowding the pan steams them.
  • Do not boil the spinach hard once combined, or it loses its bright colour.
  • Add a squeeze of lemon at the end to lift the flavour.

Storing and freezing

Keeps 3 days in the fridge. Freezes for 2 months, though the mushrooms soften. Reheat until steaming hot all the way through.

Questions

Can I use frozen spinach instead?

The saag base already contains spinach. If you make this without it, use 300 g defrosted frozen spinach, squeezed dry, and add more curry base.

Is it vegan?

Yes. It is free from gluten, dairy, egg and nuts as written.

Can I add tofu?

Yes. Fry 200 g pressed firm tofu cubes with the mushrooms for a protein boost.
