  2. 2

Heat 1 tablespoon oil in a large frying pan. Cook the chicken and onion for 8 minutes until the chicken is cooked through and no longer pink.

    8 min
  3. 3

Add the peas and rice, stir fry for 3 minutes, then stir in the ketchup and half the salt until the rice turns orange-red. Keep warm.

    3 min
  4. 4

Warm your ready made Japanese curry roux (see the base recipe), loosening with water if needed.

  5. 5

Whisk the eggs with the water and the remaining salt. Heat a little oil in a non-stick pan over a medium heat, pour in a quarter of the egg and swirl. Cook for 1 to 2 minutes until just set but still glossy.

  6. 6

Spoon a quarter of the rice onto the omelette, fold the sides over and turn out onto a plate seam side down. Repeat with the remaining eggs. Spoon curry sauce around each omelette.

Tips

  • Cook the omelette on a medium, not high, heat so it stays soft and does not brown.
  • Cool the rice first. Slightly dry, cooled rice fries better and does not go mushy.
  • For a vegetarian version, swap the chicken for diced mushrooms and tofu.
  • Use a smaller 20 cm pan if you find big omelettes hard to flip.

Storing and freezing

Eat straight away. Keep leftover fried rice in the fridge for up to 1 day if cooled within 1 hour, and reheat only once until steaming hot all the way through.

Questions

Is omurice gluten free?

Yes, if your ketchup and curry roux are gluten free. It is also dairy free and nut free as written, but it contains eggs.

How do I stop the omelette tearing?

Use a good non-stick pan, a medium heat and a little oil. Add the water to the eggs for tenderness and keep the omelette slightly soft in the middle.

Can I use leftover rice?

Yes. Day-old rice that was cooled quickly and kept in the fridge works well. Use it within 24 hours and reheat only once, until steaming hot.
