  4. 4

Cook the noodles in plenty of boiling water following the pack instructions, then drain well.

  5. 5

Divide the noodles between 4 deep bowls and ladle over the hot broth.

  6. 6

Top with pork, egg halves, sweetcorn, beansprouts and spring onion, and finish with a few drops of sesame oil.

Tips

  • Thinly sliced pork cooks in the broth in minutes. Ask the butcher to slice it or freeze it for 30 minutes to cut it thin.
  • Keep the noodles out of the broth until serving or they swell and go soft.
  • Add a spoon of chilli oil at the table for spice.
  • Use gluten free rice noodles if you want a gluten free bowl, though the texture is different.

Storing and freezing

Best eaten straight away. Keep leftover broth in the fridge for up to 3 days or freeze for 3 months and reheat until steaming hot. Cook noodles fresh each time.

Questions

Can I use chicken instead of pork?

Yes. Slice chicken thigh or breast thinly and poach it in the broth for 5 to 6 minutes until cooked through with no pink.

Is curry ramen spicy?

Not very. Japanese curry is mild and slightly sweet. Add chilli oil or a pinch of cayenne for heat.

Is this gluten free?

Not with wheat ramen noodles. Swap for gluten free rice noodles. The broth itself is gluten free with a gluten free roux.
