Method

  1. 1

Butter and line a 20 cm square tin with baking paper. Keep a cup of cold water and a small plate in the freezer for testing.

  2. 2

Put the sugar, butter, milk, cream, golden syrup and salt in a large heavy pan. Heat gently, stirring, until the sugar has fully dissolved and the butter has melted.

    7 min
  3. 3

Turn the heat up to medium and bring to a steady bubble. Cook for 35 to 45 minutes, stirring often and scraping the bottom, until it turns pale gold and thick.

  4. 4

Test by dropping a little into the cold water. When it forms a soft ball you can squash between your fingers, it is ready. A sugar thermometer reads 115C.

  5. 5

Take off the heat, stir in the vanilla and let it cool for 5 minutes. Beat hard with a wooden spoon for 5 to 8 minutes until it loses its shine and turns thick and grainy.

Scrape quickly into the tin and smooth the top. Leave for 2 hours until firm, then lift out and cut into small squares.
