Tips
- Navratan means nine jewels. The idea is a rich mix of vegetables, fruit and sometimes paneer. Add or swap to reach your own nine.
- Traditional versions are finished with cashews or almonds. Leave them out for nut allergies, or add toasted ones on top if nuts are fine for you.
- Keep the pineapple for the end so it stays in bright pieces and does not break down.
Storing and freezing
Keep in the fridge for up to 3 days or freeze for 2 months. Reheat until steaming hot all the way through.
Questions
Is navratan korma sweet?
Gently. The raisins and pineapple add fruity sweetness, balanced by lemony garam masala. Reduce the fruit if you want it more savoury.
Can I add paneer?
Yes. Fry 200 g cubed paneer until golden and fold it in at the end. It makes the dish vegetarian but not dairy free.
Is it nut free?
Yes, as written. The base is coconut based and no nuts are added.
