Method

  1. 1

Mix the lamb mince with the grated onion, gram flour, first measure of ginger and garlic paste, green chillies, coriander, garam masala and salt. Knead well for 2 minutes so it holds together.

  2. 2

Divide the mince into 4 balls. Flatten each in your palm, set a boiled egg in the middle and wrap the mince all around it, sealing with wet hands.

  3. 3

Heat 2 tbsp oil in a non stick pan. Brown the wrapped eggs for 8 minutes, turning gently, until firm and golden all over. Lift out and set aside.

  4. 4

In a large pan, heat the remaining oil and fry the chopped onions for 12 minutes until golden. Add the second measure of ginger and garlic paste and cook for 1 minute.

Stir in the turmeric, chilli, coriander and cumin, then the tomatoes. Cook for 10 minutes until thick and the oil separates. Add the water and bring to a simmer.
