Method
- 1
Grease a 15 cm square tin with a little ghee and line the base with baking paper.
- 2
Sift the gram flour. Heat the ghee and oil together in a small pan until just melted and hot, then keep warm.
- 3
In a heavy, deep pan, dissolve the sugar in the water and simmer for 4 to 5 minutes to a one thread syrup.
5 min - 4
Reduce the heat to low. Add the sifted flour and stir hard to a smooth paste with no lumps.
- 5
Add the hot ghee mixture a ladle at a time, stirring well after each. The mixture will froth and become light and porous. Keep going for 8 to 10 minutes until it is bubbling like honeycomb and starts to leave the pan.
9 min - 6
Stir in the cardamom and pour into the tin straight away. Do not smooth too much.
- 7
Cool for 5 minutes, mark into squares with a knife, then leave to set for 2 hours before cutting through and lifting out.
