Method
- 1
Heat the oven to 200°C (180°C fan). Squeeze the grated potato and carrot in a clean tea towel to remove the water. Mix in the peas, gram flour, cumin seeds, coriander, chilli powder and half the salt.
- 2
Roll into 16 small balls, place on a lined tray, brush with 1 tbsp of the oil and bake for 25 minutes, turning once, until golden.
25 min - 3
Meanwhile heat the remaining oil in a pan and fry the onion for 8 minutes until soft. Stir in your ready made ginger and garlic paste (see the base recipe) and cook for 1 minute.
8 min - 4
Pour in your ready made curry base sauce (see the base recipe) with 100 ml water and simmer for 10 minutes. Add the remaining salt and the garam masala.
10 min - 5
Add the baked koftas to the sauce and warm them through for 4 minutes without stirring hard.
4 min - 6
Scatter with coriander and serve with rice or chapatis.
Tips
- Squeeze the grated vegetables dry or the koftas will be soggy and fall apart.
- Add the koftas to the sauce just before serving so they stay a little crisp outside.
- Chill the mixture for 10 minutes if it is too sticky to roll.
Storing and freezing
Keep the koftas and sauce separate in the fridge for up to 3 days, reheated until steaming hot all the way through. They freeze well for 2 months.
Questions
Can I fry the koftas instead of baking?
Yes. Deep fry at 180 C for 3 to 4 minutes until golden. Baking is lighter and needs less oil.
Why did my koftas fall apart?
The mixture was too wet. Squeeze the veg dry and add a spoonful more gram flour if needed.
Is this gluten free?
Yes. Gram flour is made from chickpeas and contains no wheat. It is also vegan.
