Method

  1. 1

Drain the soaked beans. Rub them between your hands in a bowl of cold water so the skins come off and float, and pour the skins away. Repeat 2 or 3 times until most are gone. This gives a smooth, pale pudding.

  2. 2

Blend the beans with the peppers, onion, scotch bonnet and most of the warm water until completely smooth. Add only enough water to keep the blender moving.

  3. 3

Stir in the oil, crumbled stock cube and salt. The batter should be thick and pourable, like a loose cake batter.

  4. 4

Divide the batter between 6 heatproof ramekins or small foil dishes, filling each about three quarters full. Cover each tightly with foil.

  5. 5

Stand them on a rack in a large pot with 3 cm of boiling water, cover with a lid and steam over a medium heat for 45 minutes, topping up the water if needed.

A knife pushed into the middle should come out clean. Rest for 5 minutes and serve warm with pap, rice or on its own.
