Method
- 1
Mix the garlic, lemon juice, oil, salt, pepper and ground coriander and rub it all over the goat. Cover and chill for at least 4 hours, or overnight.
- 2
Heat the oven to 160°C (140°C fan). Put the goat in a roasting tin with the water, cover tightly with foil and roast for 2 hours, until the meat is very tender and pulls away from the bone.
120 min - 3
Meanwhile make the kachumbari. Mix the tomatoes, red onion, chilli, fresh coriander, lime juice and the 0.5 tsp salt and leave to sit.
- 4
Light the barbecue and wait until the coals are glowing and covered in grey ash, or heat the oven grill to its highest setting.
- 5
Lift the goat out of the foil and pat it dry. Grill for 5 to 8 minutes on each side, brushing with the juices from the tin, until it is charred and crisp at the edges.
13 min - 6
Rest for 10 minutes, then chop or pull into pieces. Serve with the kachumbari and ugali or rice.
