Method
- 1
Heat the oil in a large casserole over a medium-high heat. Brown the pork in two batches for 4 minutes each, then set aside.
8 min - 2
Add the shallots and fry for 4 minutes until browned at the edges.
4 min - 3
Add your ready made Massaman curry paste (see the base recipe) and fry for 2 to 3 minutes until it smells rich.
2 min 30 s - 4
Return the pork. Add the coconut milk, your ready made chicken stock (see the base recipe), tamarind, palm sugar and fish sauce. Bring to a simmer, cover and cook gently for 1 hour.
60 min - 5
Add the potatoes and cook, part covered, for 25 minutes until the pork and potatoes are tender.
25 min - 6
Add the pineapple for the last 5 minutes. Cook the rice following the packet instructions.
5 min - 7
Taste for salt and sweetness and serve over the rice.
Tips
- Browning the pork well gives a deeper sauce.
- If the sauce is thin at the end, simmer uncovered for 5 to 10 minutes.
- Pineapple can be left out. Use a squeeze of lime for brightness instead.
Storing and freezing
Cool within 1 to 2 hours and keep in the fridge for up to 3 days. Freeze for up to 3 months. Reheat until steaming hot all the way through.
Questions
Can I use pork belly?
Yes, but it is fattier. Trim some fat and skim the sauce well before serving.
Can I cook this in a slow cooker?
Yes. Brown the pork and fry the paste first, then cook on low for 7 hours. Add the pineapple at the end.
Can I use tinned pineapple?
Yes, use drained chunks in juice, and reduce the palm sugar a little.
