Method
- 1
Boil the lasagne sheets in a big pan of salted water for 8 minutes, a few at a time so they do not stick. Lift them out, rinse in cold water and lay flat on an oiled tray.
8 min - 2
Heat the olive oil in a pan and cook the onion for 8 minutes until soft. Add the garlic for 1 minute, then the tomatoes, purée, oregano and salt. Simmer for 15 minutes until thick and glossy.
15 min - 3
Mix the ricotta, spinach, egg, nutmeg and cheddar in a bowl. Season with black pepper.
- 4
Spread a thin layer of tomato sauce over the base of a large baking dish or two foil dishes. Spread 2 tablespoons of filling along each lasagne sheet and roll it up from the short end.
- 5
Stand the rolls on their ends or lay them seam side down in the dish. Pour over the rest of the sauce and top with the mozzarella.
- 6
To eat now, cover with foil and bake at 190°C (170°C fan) for 25 minutes, then uncover and bake 10 minutes until bubbling and golden.
35 min - 7
To freeze, wrap the unbaked dish well and freeze for up to 3 months. Defrost overnight in the fridge, then bake as above, adding 10 minutes, until piping hot in the middle. Baked leftovers keep 3 days in the fridge and reheat in the microwave for 3 minutes.
