Method
- 1
Whisk the flour, milk, first egg and salt into a smooth thin batter. Rest it while you start the filling.
- 2
Cover the porcini with 150 ml boiling water and leave for 15 minutes. Lift out, chop finely and keep the soaking liquid.
15 min - 3
Heat 1 tbsp oil in a large pan. Fry the onion for 5 minutes, then add the brown cap mushrooms and porcini and cook for 8 minutes until all the liquid has gone.
13 min - 4
Add the sauerkraut, marjoram, pepper and a splash of the porcini liquid. Cook for 10 minutes until the mixture is dry and golden. Cool completely.
10 min - 5
Lightly oil a non stick frying pan and cook 8 thin pancakes from the batter, about 1 minute per side. Stack them up.
- 6
Put a line of filling along each pancake, fold in the sides and roll up tightly. Dip each roll in beaten egg, then breadcrumbs.
- 7
Heat the frying oil in a pan over a medium heat. Fry the croquettes for 3 minutes per side until crisp and deep golden. Drain on kitchen paper and serve hot.
