Tips
- Add the prawns last and cook them only until pink. Overcooked prawns turn rubbery.
- Use raw prawns. Ready cooked ones need only 1 to 2 minutes to warm through.
- Defrost frozen prawns fully in the fridge and pat them dry before they go in.
Storing and freezing
Best eaten fresh. Cool and refrigerate leftovers within 1 hour, eat within 1 day and reheat until steaming hot. Do not freeze once cooked.
Questions
Can I use cooked prawns?
Yes. Heat the sauce first, then add the cooked prawns for 1 to 2 minutes only so they do not toughen.
Is it safe with a shellfish allergy?
No. Prawns are shellfish, so this is not suitable for anyone with a shellfish allergy.
What goes well with prawn korma?
Plain basmati rice, a cucumber salad and warm naan. Keep the sides simple so the mild sauce is the star.
