Method
- 1
Heat the oil in a frying pan over a medium high heat. Cook the onion for 5 minutes until soft, then add the garlic, cumin, coriander and garam masala and cook for 1 minute.
6 min - 2
Add the lamb mince and fry for 8 minutes, breaking it up, until browned and no longer wet.
8 min - 3
Pour in 150 ml of your ready made curry base sauce (see the base recipe) and simmer for 8 minutes until thick enough that a spoon leaves a trail. Season with salt.
8 min - 4
Heat the oven to 220°C (200°C fan). Lay the naan on two baking trays. Spread each with a spoonful of the keema, leaving the edge clear, then scatter over the mozzarella.
- 5
Bake for 8 minutes until the cheese bubbles and the edges are crisp.
8 min - 6
Stir the mint into the yoghurt. Top the pizzas with red onion, green chilli and coriander, drizzle over the mint yoghurt and serve at once.
Tips
- Make sure the keema is thick before it goes on the naan. A wet topping makes the bread soggy.
- Use thick, shop bought naan. Thin ones can burn at this temperature.
- Spread any extra keema in a lunchbox the next day with rice.
- Check naan labels if you are avoiding milk or egg, as many brands contain both.
Storing and freezing
Keep the cooked keema 3 days in the fridge or 3 months in the freezer. Eat the baked pizzas straight away. Reheat the keema until steaming hot all the way through before using.
Questions
Can I use ready cooked keema?
Yes. Spread 300 g of cooked keema thickly over the naan and bake as in the recipe.
Can I make this with a different mince?
Yes. Beef or pork mince work the same way. Turkey mince is leaner, so add an extra teaspoon of oil.
Is it suitable for gluten free diets?
Not as written, because naan contains wheat. Gluten free flatbreads or wraps work if you bake them for 3 minutes first to crisp them.
