Method
- 1
Mix the flour, yeast, caster sugar, salt and 2 tsp cardamom in a large bowl. Add the warm milk, softened butter and egg and mix to a rough dough.
- 2
Knead on a lightly floured surface for 10 minutes, until smooth and springy. Put it in an oiled bowl, cover and leave somewhere warm for 1 hour, until doubled in size.
60 min - 3
Mix the very soft butter, sugar and the second 2 tsp of cardamom into a spreadable paste.
- 4
Roll the dough into a rectangle about 30 x 45 cm. Spread with the cardamom butter, fold it into thirds like a letter, then cut across into 12 strips. Twist each strip and wind it into a knot, tucking the end underneath.
- 5
Place the knots on two lined trays, cover and leave for 30 minutes until puffy. Heat the oven to 220°C (200°C fan).
30 min - 6
Brush with beaten egg, scatter over the pearl sugar and bake for 10 to 12 minutes until deep golden. Cool a little on a rack and eat the same day.
