Method
- 1
Heat the oven to 170°C (150°C fan). Rub the lamb all over with 2 tbsp of the oil, half the salt and the pepper.
- 2
Put the lamb, half the rosemary, the garlic and onion wedges in a large, heavy casserole with a tight lid. Pour in the wine.
- 3
Cover with foil, then the lid, to seal in the steam. Roast for 1 hour 30 minutes.
90 min - 4
Meanwhile, toss the potatoes and carrots with the remaining oil, salt and rosemary.
- 5
Take the pot out, spoon off a little fat if you like, and tuck the vegetables around and under the lamb. Seal again with the foil and lid.
- 6
Roast for a further 1 hour 15 minutes, until the lamb is falling off the bone and the potatoes are tender.
75 min - 7
Remove the lid and foil, turn the oven up to 220°C (200°C fan) and roast for 15 minutes until browned.
15 min - 8
Rest for 10 minutes, then serve straight from the pot with the juices spooned over.
