Method
- 1
Heat the tablespoon of oil in a large frying pan and cook the onions for 8 minutes until soft. Add the mince and cook over a high heat for 10 minutes, breaking it up, until all the liquid has gone and it starts to brown.
18 min - 2
Add the garlic, salt, pepper and paprika and cook for 1 minute. Tip into a bowl and cool completely, about 20 minutes.
20 min - 3
Heat the oven to 200°C (180°C fan). Lay a sheet of filo on the work surface (keep the rest under a damp tea towel) and brush with oil. Overlap a second sheet along the long edge and brush again.
- 4
Spoon a third of the meat in a line along the nearest edge and roll up tightly into a long sausage.
- 5
Coil it into a 24 cm round oiled tin. Repeat with the remaining filo and filling, joining the rolls into one big spiral.
- 6
Brush generously with oil and bake for 35 to 40 minutes until deep golden brown and crisp.
38 min - 7
Sprinkle with the hot water, cover with a clean tea towel and rest for 10 minutes. Cut into wedges and serve warm with a green salad.
