Method
- 1
Coat the pork in your ready made al pastor marinade (see the base recipe). Cover and chill for at least 2 hours or overnight.
- 2
Heat 1 tbsp of the oil in a large frying pan over a high heat. Cook the pork for 3 to 4 minutes per side until charred and cooked through, then chop it small. Stir in the pineapple.
8 min - 3
Heat your ready made frijoles de la olla in a small pan with their broth, mashing a few beans to thicken, until steaming hot all the way through.
5 min - 4
Wipe the frying pan and heat the remaining oil over a medium heat. Cook the onion and chilli for 3 minutes until soft.
3 min - 5
Beat the eggs with a pinch of salt. Pour them into the pan and stir gently with a spatula for 2 to 3 minutes until softly set. Fold in the pork and pineapple.
3 min - 6
Warm the tortillas in a dry pan. Serve the eggs with the beans, tortillas and coriander.
Tips
- Take the pan off the heat while the eggs still look slightly wet. They finish cooking from the heat of the pan.
- Leave out the serrano chilli for children or a mild plate.
- You can use cooked leftover pork. Chop it small and warm it through before adding the eggs.
- Serve with a spoonful of salsa verde for freshness.
Storing and freezing
Best eaten fresh. Cooked pork and beans keep in the fridge for up to 3 days, cooled within 1 to 2 hours. Scrambled eggs are best eaten straight away.
