  5. 5

Put a tortilla on each plate. Top with two eggs, spoon red salsa over one and green salsa over the other, and a stripe of beans between them.

  6. 6

Scatter with onion and coriander and serve straight away.

Tips

  • Keep the salsas warm. Cold salsa on eggs ruins the dish.
  • Fry the tortillas briefly so they are crisp outside but still bendy in the middle.
  • The beans act as the divorce. Use a thick stripe so the two sauces do not mix.
  • Corn tostadas are the traditional base. Flour tortillas give a softer, more filling plate.

Storing and freezing

Best eaten immediately. Keep leftover salsas in the fridge for up to 4 days, and cook the eggs fresh each time.

Questions

Why are they called divorced eggs?

The two eggs sit apart with different salsas, red and green, and a line of beans between them, like a divorced pair.

Is it dairy free?

Yes. The eggs, tortillas, salsas and beans contain no dairy unless you add cheese. Add crumbled queso fresco if you like.

Can I poach the eggs instead?

Yes. Poached eggs make a lighter dish. Drain them well so they do not water down the salsa.
