Method
- 1
Heat the oven to 220°C (200°C fan) and put two baking trays inside to heat.
- 2
Fry your homemade Mexican chorizo (see the base recipe), crumbled, in the oil for 5 minutes until sizzling and cooked through.
5 min - 3
Lay the tortillas (see the base recipe) on the hot trays and bake for 2 minutes until they begin to crisp.
2 min - 4
Spread each tortilla with your ready made salsa roja (see the base recipe), leaving a 1 cm border. Scatter with cheese, chorizo, red onion and jalapeno.
- 5
Bake for 8 to 10 minutes until the cheese is bubbling and the edges are crisp and golden.
9 min - 6
Scatter with coriander and serve cut into wedges.
Tips
- Pre baking the tortilla for 2 minutes stops the base going soggy.
- Use a thin layer of salsa. Too much makes the tortilla soft in the middle.
- Layer two tortillas for a thicker, chewier base.
- Add black beans or sweetcorn for a fully loaded version.
Storing and freezing
Best eaten fresh. Leftovers keep in the fridge for up to 1 day and reheat on a hot tray until steaming hot all the way through.
Questions
Is this a real Mexican dish?
Tortilla pizzas are a home cooking idea in Mexico and the US border states rather than a traditional dish. They are a quick way to use salsa, chorizo and tortillas.
Can I use corn tortillas?
Yes, but they crisp differently and are smaller. Flour tortillas give a larger, bendy base that crisps nicely at the edges.
Can I make them vegetarian?
Yes. Replace the chorizo with refried beans, sweetcorn and peppers for a vegetarian pizza.
