Method
- 1
Mix the masa harina and salt with the warm water and knead for 2 minutes into a soft, smooth dough that does not stick to your hands. Cover and rest for 10 minutes.
10 min - 2
Divide into 4 balls, and roll each into a rope of 15 cm. Press flat between two sheets of cling film or a tortilla press into an oval about 20 cm long and 5 mm thick.
- 3
Cook in a dry hot pan for 1 minute each side until the dough just sets and lifts from the pan.
2 min - 4
Fry the homemade Mexican chorizo (see the base recipe) for 5 minutes. Add the pollo deshebrado (see the base recipe) and a splash of water and warm through until steaming hot all the way through. Warm the refried beans (see the base recipe) in another pan.
5 min - 5
Heat the oil in a large frying pan and shallow fry the huaraches for 2 minutes each side until crisp but still tender in the middle.
- 6
Spread each with beans, then top with the chorizo and chicken, onion and lettuce. Serve with lime wedges.
Tips
- Keep the dough covered with a damp cloth while you shape it so it does not crack.
- If the dough cracks at the edges it needs a splash more water. If it sticks, add a spoonful of masa harina.
- Make them thinner for a crisper huarache or thicker for a softer, chewier one.
Storing and freezing
Best eaten straight away. Keep the toppings in the fridge for 2 days. Cooked huaraches reheat in a dry pan or oven until crisp and steaming hot.
Questions
Where do I buy masa harina in the UK?
Masa harina is sold in the world food aisle of large supermarkets and online. Check the pack says gluten free and is made from corn, not corn flour.
Can I make the huaraches ahead?
You can pre-cook the flat discs in the dry pan, chill them for a day, and shallow fry just before serving.
Can I use cornflour instead of masa harina?
No. Cornflour behaves differently and will not make a dough. Only masa harina works.
