Method

  1. 1

Toss the beef with the cornflour and a pinch of pepper. Pat the tomatoes dry after cutting so the pan does not get too wet.

  2. 2

Heat 1 tbsp of the oil in a wok or large frying pan until very hot. Fry the beef in two batches for 1 minute each until browned. Lift out onto a plate.

  3. 3

Add the remaining oil, then the onion and garlic. Stir fry for 2 minutes.

  4. 4

Add the tomato wedges and cook for 3 minutes, pressing a few so they release juice and form a loose sauce.

  5. 5

Pour in 90 ml of your ready made all purpose stir fry sauce (see the base recipe) and bubble for 1 minute.

Tips

  • Use ripe, firm tomatoes. Over soft ones collapse into a thin sauce.
  • Slice the beef across the grain and keep the cooking time short so it stays tender.
  • If the sauce is too sharp, stir in a pinch of sugar.

Storing and freezing

Keeps 2 days in the fridge in a covered tub. Cool within 1 hour and reheat until steaming hot all the way through.

Questions

Can I use tinned tomatoes?

Fresh tomatoes give the best texture, but a drained tin of whole plum tomatoes, roughly chopped, works in a pinch. Cook for a minute less.

What cut of beef is best?

Rump, sirloin or flank steak sliced thinly against the grain. Stewing cuts stay tough in a quick stir fry.

Is it gluten free?

Yes, as written. The all purpose stir fry sauce is gluten free when made with gluten free tamari.
