Method
- 1
Make the syrup. Stir the 300 g sugar and water over a medium heat until dissolved, add the lemon juice and simmer for 10 minutes. Leave to cool completely.
10 min - 2
Heat the oven to 180°C (160°C fan). Mix the walnuts, cinnamon and 1 tbsp sugar. Keep the filo under a damp tea towel so it does not dry out.
- 3
Lay one filo sheet with a long edge towards you, brush lightly with butter and cover with a second sheet. Spoon a sixth of the walnut mix in a line along the long edge nearest you.
- 4
Roll up tightly into a long log, brush with butter and cut diagonally into 4 slices about 4 cm wide. Stand the slices upright, slanted, in a buttered 22 by 30 cm tin. Repeat with the other sheets, packing the tin tightly.
- 5
Brush the tops with the remaining butter. Bake for 30 to 35 minutes until deep golden.

Pour the cold syrup over the hot baklava, letting it sizzle. Rest for at least 2 hours before serving.
