Method
- 1
Cut out the hard core of the cabbage. Lower the whole cabbage into a big pot of boiling salted water and cook for 10 minutes, peeling off the outer leaves with tongs as they soften. Return the cabbage to the pot until you have 12 large leaves. Shave down any thick stem on each leaf with a knife. Shred the leftover cabbage.
10 min - 2
Boil the rice in salted water for 5 minutes, then drain. It should still be firm in the middle.
5 min - 3
Heat 1 tbsp oil in a frying pan and cook half of the onion for 6 minutes until soft. Cool, then mix with the mince, rice, dill, 1 tsp salt and plenty of black pepper.
6 min - 4
Put a heaped tablespoon and a half of filling on each leaf near the stem. Fold in the sides and roll up tightly like a small parcel.
- 5
Heat the oven to 180°C (160°C fan). Heat the rest of the oil and cook the remaining onion and the carrots for 8 minutes. Stir in the tomato purée, water, bay leaves and remaining salt.
8 min - 6
Spread the shredded cabbage over the base of a deep casserole. Pack the rolls on top, seam down. Pour over the sauce, cover with a lid or foil and bake for 1 hour.
60 min - 7
Spoon the soured cream over the top, return to the oven uncovered for 10 minutes and serve hot with the sauce spooned over.
