Method

  1. 1

Heat the oven to 160°C (140°C fan). Mix the oil, all the ground spices, garlic and 1 tsp of the salt into a paste.

  2. 2

Rub the paste all over the goat. Lay the tomatoes and onion in a deep roasting tin and sit the goat on top.

  3. 3

Pour 200 ml of the water around the meat. Cover the tin tightly with two layers of foil.

  4. 4

Roast for 3 hours, until the meat is soft and falling from the bone. Smell it when you lift the foil: it should be deeply spiced and rich.

  5. 5

Rinse the rice until the water runs nearly clear. Lift the goat onto a plate, cover and keep warm. Tip the tin juices and softened onion into a large pan, skimming off most of the fat.

  6. 6

Add the rice, the remaining 500 ml water, the remaining salt, dried limes and lemon juice. Bring to the boil, cover and cook on the lowest heat for 12 minutes, then rest off the heat for 10 minutes.

Fluff the rice with a fork and pile it onto a platter. Put the goat on top and serve with a spicy tomato salsa or chilli sauce if you like.
