    8 min
  3. 3

Mash a few lentils with the back of a spoon and season with salt.

  4. 4

Warm the tortillas in a dry pan for 20 seconds per side.

  5. 5

Fill with lentils and avocado, and top with your ready made pickled red onions (see the base recipe).

Tips

  • Use tinned green or brown lentils; puy lentils are firmer.
  • Add the adobo gradually, as it varies in heat.
  • A squeeze of lime lifts the flavour.

Storing and freezing

Lentils keep 3 days in the fridge and freeze for 2 months. Reheat until steaming hot.

Questions

Can I use red lentils?

Not tinned ones, as they go mushy. Use green or brown.

Are these filling?

Yes, lentils are rich in fibre and protein.

How spicy are they?

Medium. Start with 2 tablespoons of adobo and add more to taste.
