Method
- 1
Bring a large pan of water to the boil. Boil the corn for 8 minutes until just tender, then drain and pat dry.
8 min - 2
Brush the corn all over with your ready made al pastor marinade (see the base recipe), using a thin even layer.
- 3
Heat a griddle pan or barbecue until very hot. Grill the corn for 8 to 10 minutes, turning often, until charred in places and glossy.
9 min - 4
Brush or spread each cob with the elote crema while still hot.
- 5
Roll the cobs in the crumbled cheese, then dust with the ancho chilli and scatter over the coriander.
- 6
Serve straight away with lime wedges to squeeze over.
Tips
- Boil the corn first so it cooks through, then finish on the grill for the char.
- Use a thin layer of marinade. Too much burns on the grill before the corn is heated through.
- Cotija is the traditional cheese. Feta or finely grated Parmesan are good UK swaps.
- Serve on skewers or sticks for easy eating.
Storing and freezing
Best eaten fresh. Leftover corn keeps in the fridge for up to 2 days. Cut the kernels off and fold into rice or salads. Reheat until steaming hot all the way through.
Questions
Can I make this on a barbecue?
Yes, barbecue is the ideal way. Grill the cobs over medium hot coals for 8 to 10 minutes, turning often.
Is it gluten free?
Yes. Corn, cheese, the marinade and the elote crema contain no gluten or nuts. The crema normally contains mayonnaise, so it has egg, and the cheese is dairy. Check the cheese label if you need it vegetarian, as feta often uses animal rennet.
Can I make it vegan?
Yes. Use a dairy free yoghurt based elote sauce and skip the cheese or use a dairy free alternative.
