Method
- 1
Boil the potatoes in salted water for 8 minutes until just tender. Drain and let them steam dry for 2 minutes.
8 min - 2
Heat 1 tablespoon of the oil in a large frying pan over a medium high heat. Fry the potatoes for 8 minutes, turning, until golden and crisp. Add the onion and fry for 4 minutes.
12 min - 3
Add the homemade Mexican chorizo (see the base recipe), break it up and fry for 5 minutes until cooked through.
5 min - 4
Stir in the pollo deshebrado (see the base recipe) and the refried beans (see the base recipe) with a splash of water. Warm for 3 minutes until steaming hot all the way through.
3 min - 5
Make 4 wells in the skillet. In a separate small pan fry the eggs in the remaining oil until the whites are set and the yolks as runny as you like, then slide them on top.
- 6
Scatter with jalapeno, coriander and avocado and take the skillet to the table.
Tips
- Par boil the potatoes first. It guarantees they are cooked through while the outsides crisp up.
- Cook the eggs in a separate pan so the chorizo fat does not overcook them.
- Serve with warm corn tortillas or hot sauce on the side.
Storing and freezing
Eat fresh. Leftover hash without eggs keeps 2 days in the fridge, reheat until steaming hot all the way through. Fresh eggs when serving.
Questions
Can I make it ahead?
Yes. Cook the potatoes and chorizo hash earlier in the day, chill and reheat in the skillet, then fry fresh eggs on top.
Is it suitable for coeliacs?
The base recipes and this method use no wheat, so yes, but always check the labels of any hot sauce or shop bought extras.
Can I add cheese?
Yes. Crumbled queso fresco on top is traditional, but leave it off to keep the dish dairy free.
